Generally the house wins by either stacking the odds in its favor or by acting as the middle man and making sure they get a piece of the pie no matter what the outcome is. You say that all bets have 2:1 odds, which means that, if bets on both sides are equal, you break even. If the bets are not equal, you stand a chance to win, or lose, but with an equal gain or loss on either outcome. That is to say, you are not guaranteed a profit, and your profits are exactly in line with your risks. And given that the betting is on an outside outcome, you can hardly have any kind of effect on the odds themselves.
